Coconut Rice

2 cups sushi rice
1 cup coconut milk (I used light)
1 ½ cups water
pinch of salt

Combine in a pot with a tight fitting lid and bring to a boil. Stir well, cover and cook on low for 15 minutes. Put a towel in between lid and pot and let sit off the heat for another ten minutes.
